Super Spinach Salad

The lemons at trader joe's are always less expensive than my local larger grocery store so i pick up a couple every time i go.

Recipe Summary Super Spinach Salad

I tried a similar salad from Trader Joe's® and fell in love. This is my attempt to recreate it on a regular basis.

Ingredients | Trader Joe's Cruciferous Crunch Collection

2 cups packed fresh spinach

½ cup cooked quinoa

¼ cup shredded carrots

¼ cup dried cranberries

¼ cup canned chickpeas (garbanzo beans)

¼ cup edamame (green soybeans)

2 tablespoons pumpkin seeds

¼ cup ginger-miso dressing, or to taste
