Thimble Cookies

Another old favorite of my mother's. A neighbour was making these when I was a child and I never got enough of them.

½ cup butter

¼ cup white sugar

1 egg yolk, beaten

2 teaspoons lemon juice

1 cup all-purpose flour

1 egg white

1 cup finely chopped walnuts

1 cup (approx.) raspberry jam or jelly
